Epic Dark Chocolate Energy Bites

If you know me, you know how much I enjoy chocolate.

Actually, that's an understatement. It's an obsession. What one may consider to be stooping to some pretty low lows for the sake of some good cacao (including hoarding, hiding, and stock-piling it), I view as dedication. Cue the seagulls from "Finding Nemo".........."mine mine mine mine mine."

If you love the richness of dark chocolate, this recipe is right up your alley. Easy, delicious, healthy, and filling....and low calorie. That means you can have more than one at a time HECK YES.

Epic Dark Chocolate Energy Bites (Prep time: 5 minutes)

1 cup dried plums/prunes OR dates

1/4 cup mini semisweet chocolate chips (can use vegan chocolate chips if preferred)

1 scoop chocolate whey protein (you can use unflavored whey protein if you prefer, or plant based protein instead for my vegan friends)

1/4 cup unsweetened cocoa powder

1/4 cup vanilla almond milk unsweetened

Instructions: Combine prunes, whey, cocoa powder, and almond milk in food processor or blender. Pulse/blend until combined. You may need to scrape the sides of the bowl/blender a few times between pulsing to make sure everything is combined thoroughly. Scoop the mixture into a bowl and add the chocolate chips. The mixture will be VERY sticky, so before you begin to form the batter into balls, spray your hands with a cooking spray. Form mixture into 12 balls. Store in the freezer in a plastic bag for up to 1 week. Enjoy!
