Carrot Cake Energy Balls

Marathon week is upon us here in Little Rock! Whether you're running this weekend, working out, or watching Netflix, this recipe is one for all of us to get our "nom" on.

Loaded with healthy carbohydrates, protein, and veggies, it's a winner for your taste buds AND your bod.

Carrot Cake Energy Balls Recipe by Jolly Bodies Fitness

Gimme.

Carrot Cake Energy Balls

1 cup quick oats

1 cup powdered PB

1 scoop vanilla whey (or unflavored whey or plant based protein)

1/2 cup raisins

2 TBSP stevia

1/2 cup shredded carrots

1/4 cup unsweetened coconut flakes

1/4 tsp nutmeg

1/4 tsp cloves

1/2 tsp cinnamon

Measure out 1/2 cup of shredded carrots, and dice into slightly smaller pieces (about a quarter inch long). Pop into microwave for about 2 minutes to soften the carrots.

Measure out powdered PB and add about 1/2 cup of water. The mixture should be easy to stir, so if you need to add a little more water, add it slowly until the mixture is smooth like peanut butter.

Add nutmeg, cloves, cinnamon, whey protein, and stevia to the PB mixture. If the consistency is too thick, add slightly more water until consistency is like peanut butter (easy to stir, but hangs off the spoon without dripping).

Add oats, raisins, coconut, and softened shredded carrot. Combine ingredients until evenly distributed. Form into 12 balls, store in refrigerator for up to 1 week. Enjoy!
